Hot days call for cold soups. One of them is gazpacho. Originating from Andalusia, this Spanish tomato soup is refreshing, nutritious and 100%  raw-vegan. It can be prepared in 15 minutes with simple ingredients. 


Ingredients:


2-3 pounds ripe tomatoes, diced

1 cucumber, peeled and diced

½ red bell bell pepper, peeled and seeded

½ medium red onion, rinsed

2 garlic cloves

2-3 tablespoons sherry vinegar or lemon juice

½ cup virgin olive oil (plus more to drizzle before serving)

1 ½ teaspoons sea salt

¼ teaspoon freshly ground black pepper

Method:


Place everything in a blender and blend thoroughly

Chill in the refrigerator for a few hours

Optional:


Drizzle with olive oil before serving

Suggested toppings: Chopped peppers, Crouton, diced cucumber - make your own style!


Tips:

  • Don't over fill your blender. If necessary, work in batches so everything is nicely pureed
  • As the main ingredient for the soup, it is important that you usegood quality tomatoes use good quality tomatoes. Make sure you buy local tomatoes from the farmers market
  • Give the soup enough time to cool. At least 2 hours before serving.
  • The original version calls for bread, but it's not necessary - if you think the soup is thick and creamy enough.
